Joseph Stephon Pappion, 64, departed this earthly life surrounded by the peaceful comfort of his home in Hendersonville, Tennessee, on Tuesday, April 14, 2026. He was born, number six of nine, to Cornelius Pappion Sr. and Cecilia Guillory Pappion in Lake Charles, Louisiana, on December 10, 1961. Joe was a devoted father, son, brother, uncle, and friend whose presence brought comfort, laughter, and a deep sense of connection to everyone blessed to know him.
A proud 1979 graduate of Sam Houston High School, Joe went on to attend St. Joseph Seminary College in Covington, Louisiana. He continued studying Scripture and Church history well into adulthood. He later pursued his passion for the culinary arts at the Culinary Institute of America in Hyde Park, New York. Joe honorably served his country for six years in the United States Marine Corps and Marine Reserve, demonstrating a steadfast sense of duty and commitment. He carried the pride and discipline of a Marine with him for the rest of his life, honoring the brotherhood he belonged to and letting its values guide the way he lived and served others.
Following his military service, Joe built a respected and meaningful career in the hospitality industry. He managed multiple Morrison’s Cafeterias for many years, earning a reputation for his leadership, dedication, and genuine care for his staff. He later served as Director of Food and Beverage for the opening of Coushatta Casino in Kinder, Louisiana, and Players Casino in Lake Charles — roles that reflected his expertise and passion for his work. Joe also became a beloved and familiar presence in Lake Charles during his many years as General Manager of the Steamboat Bill’s restaurants in the Lake Area, where he built lasting relationships and left a positive impression on countless staff and guests. He spent a couple of years in Taos, New Mexico, where he launched and operated a Creole restaurant, Hungry Gator — his way of sharing his culture with others. In his later years, he enjoyed a well-earned semi-retirement in Hendersonville, Tennessee, while working part-time at Cracker Barrel. Simply put, feeding people was Joe’s love language throughout his life.
Joe found tremendous joy in being surrounded by his large extended family. He loved cooking for family gatherings, celebrating his family’s rich culture, and bringing people together through food, music, and laughter. He was especially fond of Zydeco music and could often be found dancing, enjoying music, or participating in family jam sessions—moments that will forever be cherished by those who shared them with him. Joe carried a personal mantra that reflected his journey and outlook on life in a tattoo of an open hand releasing a butterfly, paired with the words “Pappion Toujours” (“Forever a Butterfly”). He once said it was his reminder that no matter where life brought him as he explored new paths, it was his reminder that he was and always would be a Pappion. 🦋
Joe was preceded in death by his parents, Cornelius and Cecilia (Guillory) Pappion, and his oldest brother, Rufus Pappion.
He leaves to cherish his memory his daughter, Abigail Pappion; two sisters, Mary Pappion of Colorado Springs, Colorado, and Portia Metoyer (Russell) of Lake Charles, Louisiana; five brothers, Gregory Pappion (Roseanna) of New Orleans, Louisiana; Dempsey Pappion of Buena Park, California and Moss Bluff, Louisiana; Dwight Pappion and Cornelius “Neal” Pappion of Moss Bluff, Louisiana; and Patrick Pappion (Jeanne) of Fort Worth, Texas; three grandsons; Ayden, Drake, & Rhett Fontenot; three God-daughters, Tiffany Metoyer, Samantha Mott, and Jolie Dubriel; along with a host of nieces, nephews, and many extended family members that were lucky enough to be loved by him.
As we commend Joe for his eternal rest, we invite you to join us for the following services. A visitation will be held on Saturday, May 2, 2026, at King’s Funeral Home, 1611 Gerstner Memorial Drive, Lake Charles, Louisiana, from 10:00 a.m. to 12:30 p.m., with a rosary to be recited at 10:30 a.m. A Funeral Mass will follow at 1:00 p.m. at St. Theodore Catholic Church, 785 Sam Houston Jones Parkway, Moss Bluff, Louisiana.
Interment and Military Honors will take place on Monday, May 4, 2026, at 10:00 a.m. at Southwest Louisiana Veterans Cemetery, 1610 Evangeline Road, Jennings, Louisiana, under the direction of King's Funeral Home.
